1 - Cut the fennel into very thin slices and rinse them.
2 - Peel the orange removing the skin from the wedges and cut them into pieces.

3 - Cut the pitted olives into pieces.
4 - Combine all ingredients in a bowl.

5 - Season with extra virgin olive oil, a pinch of salt and pepper, to taste.
Useful Suggestions
This salad is very healthy thanks to the main ingredients, the fennel, with diuretic and anti-oxidant properties and the orange, rich in Vitamin C, a real help for our immune system, but actually you’ll be surprised by its particular and fresh taste.
Suggested Wine
Fennel’s main feature is a sweet taste. On the other hand in our salad the orange will be the key ingredient, so we suggest a pairing with a white wine matching with this acid element. Our choice is a good white wine produced in the South of Italy, fragrant and soft but with a firm alcoholic structure.
