1 Kg (2.2 Lbs) Ripe Roma Tomatoes
1 - Rinse the tomatoes and make an ‘x’ cut on the bottom.
2 - Set a large pot full of water to boil over high heat. When water comes to a boil, put in the tomatoes and blanch for a few minutes, until the skin cracks.
3 - Remove with a slotted spoon and put in cool water.
4 - The skin will be removed quickly and easily.
5 - Peel all of them completely.
6 - Cut them into slices and remove all the seeds.
7 - Blend them with a hand or a stand mixer
8 - The sauce shall be used immediately for raw or cooked sauces for pasta.
