Potatoes and green beans

1 kg (2.2 lbs) potatoes

250 gr (4 ounces) green beans

4/5 tbsps extra virgin olive oil

A pinch of salt

1 tablespoon chopped parsley

Optional: vinegar



1 - Set a large pot of water to boil with the potatoes, rinsed and unpeeled.

2 - Meanwhile trim off the tops of the green beans and rinse them.


3 - When water boils, add a handful of coarse sea salt and the green beans. Cook until both vegetables are soft by piercing them with a fork. Drain in a colander.

4 - Peel the potatoes and cut them into chunks and the green beans in two.


5 - Mix 4/5 tbsps of extra virgin olive oil, a pinch of salt and a the chopped parsley. Use to season potatoes and green beans, drizzle with vinegar to taste.

Useful Suggestions

You can enrich the recipe by adding a hard-boiled egg, broken into small pieces. It will be perfect for your lunchtime at work.
