


1x125 gr. Fat free yogurt pot (use the pot as measuring cup)
2 measuring cups sugar
3 measuring cups all-purpose flour
3 eggs
2 / 3 apples (renetta variety)
1 measuring cup olive oil
Grated zest from 1 organic lemon
Baking powder 16 gr = 3 teaspoons

method


1 - Whisk the 3 eggs with a pinch of salt and sugar on a high speed until light and fluffy.
2 - Add the yogurt and whisk the mixture on a low speed.


3 - Incorporate the flour, one measuring cup at a time and mix.then oil.
4 - Then add oil, the grated lemon rind and the baking powder.


5 - Mix.
6 - Eventually add the apples, peeled and finely sliced.


7 - Heat the oven at 180C / 350F Line a 24 cm (9”) diameter pan with parchment paper, drop the batter and bake for 50/55 minutes.
8 - Remove from pan and cool completely. Serve with powdered sugar.
