Butter is widely used both for sweet recipes and savory ones, but it can be substituted with alternative ingredients easily available in our pantries, in case we are vegans or if we’d like to obtain lighter dishes.

OIL

Vegetable oil is one of the best alternative to butter in sweet recipes, you just have to take care of quantity, that shall be 15%-20% less than the quantity of butter. You can use corn oil, sunflower oil or peanut oil. So, just remind that 100 gr of butter can be replaced by 80 gr of vegetable oil.

For your savory recipes, extra virgin olive oil can be used as well, decreasing the quantity of 15%-20% in proportion to butter.

YOGURT OR CREAM

100 gr of butter can be substituted with 125 gr of yogurt (the flavour you prefer) or cream, both cow milk or vegetable cream: the resulting cakes will be soft and tasty, lighter and low in calories.

AVOCADO PULP

100 gr of butter can be replaced by 60 gr of avocado pulp, blended or mashed with a fork: even if it may sound strange, the avocado is perfect to be used in the place of butter, in particular for the preparation of ring-shaped cakes, biscuits and tarts.

MARGARINE or VEGETABLE BUTTER

100 gr of butter can be substituted with the same quantity of margarine or vegetable butter. They are both perfect in sweet recipes and savory ones. The vegetable butter easily melts in a double saucepan or in the microwave oven. Furthermore it’s advisable to use it in case of intolerance to dairy products.
